"Chef Michael Pasquarello experiments with specials at dinner. Recent concoctions include a sweet-and-sour Sicilian sauce for tuna and a Milanese-style pork tenderloin. The latter are four pink-centered morsels lightly crusted in flour, attended by a mix of earthy mushrooms in a translucent gold marsala sauce.
Pasquarello says the cafe's most popular pressed sandwiches are grilled chicken with roasted reds, sweet onions and provolone; a fancified Cubano with pork tenderloin, smoked ham, caramelized onions and mustard aioli; and an ungrilled version with smoked salmon, capers, sun-dried tomatoes and savory mascarpone.
But a recent dinner revealed the mack daddy of panini: grilled chicken breast in an excellent truffle marinade, layered with nutty fontina and shitake caps. Proscuitto appears frequently on Lift's menu. On a thin-crust pizza, the Italian ham lies on top of basil tomato sauce and beneath salty Gaeta olives and swaths of mild asiago.
